For the past eight weeks, I have been enjoying the delights of my Pickney’s Produce CSA boxes that come each week. One of the most challenging things is coming up with ideas on what to do with the vegetables, so they don’t go to waste.

Last week, we received eggplants and I was determined to make eggplant parmesean at some point. With the help of Bobby Flay, I was able to do just that. 

This by far is one of my favorite recipes and one that I can see myself making in the future. I made a couple of changes by just using the Fontina and mozzarella cheeses.
