The colors of our vegetables are beautiful. We are eight weeks in and I am just as excited this week as I was the first week.

I am having one problem though. What am I to do with sweet potatoes again this week?

I am running out of ways to make them that does not require me to fry it or add tons of sugar. Now don’t get me wrong. I love me sweet potato french fries and a sweet potato with melted butter and brown sugar, but not sure how much more I can take.

Since the temps have definitely dropped this week, I want to seek comfort in a bowl of chili or something else I can make in my crock pot. I may try my hand at a soup that will involve a sweet potato or two.

But before I start trying to come up with sweet potato, I opted for something nice and easy with the beautiful bib lettuce and tomatoes – BLT sandwiches with corn on the cob from last week. I know a stirfy is also on the menu this week with the beautiful broccoli and bok choy.

Sweet potatoes. Ummm. I do know that I plan on making a sweet potato hash this weekend with an omelet, but what else am I going to do? Not sure. I’m open for recipes and suggestions. Got any?
